For Lacey’s first Thanksgiving I decided to get her a 1/4 cup of Beneful(Roasted Turkey) with no dry food.An exception for only Thanksgiving & Christmas. Also to make her one of Rachel Ray’s Pet Friendly Recipes.Since it is Thanksgiving I figured everything should be about Turkey,Pumpkin,Cranberry sauce etc
Pumpkin Barley with Turkey(dinner)
1 qt chicken broth
1 T unsalted butter
3/4 c long grain rice
3/4 c pearl barley(or regular barley)
pinch of ground nutmeg
1/3 lb ground turkey
1 c canned pumpkin puree
In a small pot warm the chicken broth over low heat.
In a large skillet melt the butter over medium heat, then ad the rice, barley and toast for 3-4 minutes, stirring occassionally.Season the grains with the nutmeg and stir in half of the warm broth. Cook till the broth bubbles, abt 5 minutes.Add the turkey, crumbling as you drop it into the skillett and cook until the liquid is absorbed by the grains abt 5 minutes.Stir in the remaining broth,1/2 c at a time, allowing the broth to be fully absorbed before adding more.Cook til the barley is tender about 18 minutes.
Stir in the pumpkin puree.Cook over medium heat until just heated through, about 1 minute.Season to taste with salt.Humans can eat it too!
